Matcha Key Lime Slice – Eat Yourself Healthy With Every Bite

Just like key lime pie, only healthy! This matcha key lime slice is vegan, refined sugar-free, gluten-free, dairy free and subLIMEly delicious. But listen up folks, there’s more! The secret ingredient in this slice is matcha. Matcha Key Lime Slice - just like key lime pie, only healthy!

Ingredients
  • Base
  • ½ cup of raw unsalted cashews
  • ½ cup of almond meal
  • ½ cup of desiccated coconut
  • 1/3 cup of coconut oil (melted)
  • 2 tablespoons of rice malt syrup
  • Filling
  • 1 large ripe Haas avocado (flesh only)
  • 1½ cups of raw unsalted cashews (soaked in water for at least 2 hours)
  • ½ cup of coconut oil (melted)
  • 2 tablespoons of rice malt syrup
  • ¼ cup of freshly squeezed lime juice
  • 1 tablespoon of lime rind
  • 1 teaspoon of vanilla powder or vanilla essence
  • 2 teaspoons of matcha
Directions
  • Step 1 Line a standard loaf tin with baking paper.
  • Step 2 Mix all the base ingredients together in a food processor until well combined. You will know that its ready when you can squeeze the mixture in your hand and it sticks together. Do not worry if there are still some chunks of cashew in the mixture, it will give your base a nice crunch!
  • Step 3 Next rinse and dry your food processor, ready of the filling.
  • Step 4 Place all the filling ingredients into your food processor and mix until the filling is smooth, scraping down the sides if you need to.
  • Step 5 Spoon the filling on top of the base and smooth out the top with a spatula, or the back of a spoon.
  • Step 6 Cover and place the tin in the freezer for an hour, or until set, and then transfer to the fridge
  • Step 7 Press the mixture into the lined loaf tin using your fingers until it evenly covers the entire tin.
  • Step 8 When your ready to serve remove the slice from the loaf tin, cut into squares, and enjoy

Tips

  • Are you paleo? Make this recipe paleo friendly by substituting honey or maple syrup for the rice malt syrup.
  • I use matcha from Melbourne based company Match Maiden. It is made with 100% organic green tea leaves.
  • Can’t eat it all at once? Don’t despair…this slice will keep in the fridge for at least 4 days or, in the freezer for weeks. Just defrost the slices in the fridge before serving, or enjoy as a frozen treat.
  • No matcha. No worries! You can make the slice without matcha. It won’t affect the taste, but because matcha adds colour to the filling, your slice may end up being a lighter shade of green.
  • Pimp your slice! Strawberries, cacao nibs, bee pollen…the options are endless. I like it served with lime zest and coconut yoghurt…yum!
