Yep, mornings…the struggle is real. Hands up who feels my pain?!!
But good news. Just because you hit the snooze button one too many times, doesn’t mean you miss out on breakfast.
And, I don’t mean grabbing a slice of toast as you run out the door.
These 5 minute breakfasts are simple, healthy, AND totally yum. Plus, there’s no overnight prep, crazy ingredients or blenders. I mean, green smoothie you might take 2 minutes to whiz up, but whose going to clean that blender?
So, if you think you don’t have time for breakfast, think again! These 5 minute breakfasts will change your mornings forever.
Make Your Own Muesli
Got a stash of nuts and seeds in your pantry? Put them to work by making your own muesli.
Trust me. It’s easy. Just throw a tablespoon of each of your fav seeds or nuts into a bowl, sprinkle with cinnamon and serve with milk or yoghurt and berries. It’s that simple!
A super yummy and totally good for breakfast done in like, 39 seconds. Plus, you get to use up all those open packets sitting in your pantry. It’s a total win win all round.
Breakfast Antipasto
Okay, so why isn’t the whole world eating this for breakfast? It’s just like a Sunday afternoon with your girlfriends, only without rose (sorry guys, no wine before midday!).
Ham, cheese, bread, cherry tomatoes and pear. It doesn’t get more simple or delicious than antipasto for breakfast. In fact, I’m willing to go out on a limb and say best breakfast ever – even without the wine!
Cake for Breakfast
If I was in charge, cake for breakfast would be compulsory at least once of week.
Microwave mug cakes, make the perfect quick brekkie. Why? Super easy, only minutes to make and amazingly delish!
And the best part there is something for everyone. My favourite? This healthy chocolate mug cake served with berries and yoghurt (it also happens to be refined sugar, gluten and dairy free, plus there is real life chocolate in it!).
But if that’s not your thang, there is a gazillion (not even kidding) mug cake recipes on Pinterest. Be warned, it’s total mug cake mania out there.
Guaranteed to make you drool.
Banana Split Porridge
When it’s cold outside, there is nothing better than kicking off the day with a big bowl of porridge. And thanks to the magic of the microwave, the perfect porridge can be yours in less than 2 minutes.
And, it is so easy, you are seriously going to freak (in a totally good way, of course).
Just add ½ cup of oats, ½ cup of milk (any kind) and ½ cup of water to a microwave safe bowl, microwave on high for 1 minute, stir, then microwave for another 30 seconds. That’s it. Simples!
The only extra you need to do to make the banana split porridge, is mix a teaspoon of cacao (or cocoa) with the milk and oats, and once they are cooked, top with banana, yoghurt, peanuts and cherry – cos what’s a banana split without a cherry on top!
Once you get the hang of it, play around with flavour combos. Think banana and cinnamon, strawberry and vanilla, or my all- time favourite…peanut butter.
It brings a whole new meaning to GOOD Morning.
Scrambled Eggs on Toast
I know what you are thinking. I was sceptical too. But you legit can cook light and fluffy eggs in the microwave. I mean just look at those bad boys!
You seriously have to give this a try. And you have nothing to lose, because getting your scrambled egg on in the microwave is super easy. Just whisk 2 eggs and 2 tablespoons of milk in a mug, microwave on high for 1 one minute, give the eggs a stir and a mash, and then microwave for another 30 seconds. Then…excuse me Madam, your scrambled eggs are served. So easy!
Hot tip – stir through some cheese and leftover herbs – YUM! Oh, and eat them from the mug. That way there’s hardly anything to clean up.
