There is fried rice and then there is Mexican fried rice. 

Okay. I know what you’re thinking. Why mess with a good thing? But, hear me out: 

  • Mexican rice gives you an excuse to eat more Mexican food. This is awesome, because Mexican food is the *actual* best. 
  • This recipe is quick. In fact it made the list of 5 Speedy Dinners to Try This Week over at MyDeal. I’ve put 15 minutes on it, but it won’t take you that long. Less Kitchen. More Netflix. 
  • There’s no chorizo in regular fried rice. And chorizo is life. 
  • It’s a super simple-anyone can cook it-type of recipe. 
  • You can make it your own. Ditch the stuff you don’t like and add in the stuff you do. Or the stuff you need to use up. Or both.
  • And, I may be going out on a limb. But tastier than normal fried rice.  I mean think about it – paprika, cumin & chili. Holy yum!

Mexican Fried Rice

Description

Loaded with chorizo and just the right amount of spicy smokey flavour, the whole family will love this quick and easy weeknight meal.


Ingredients

  • 250g pack of microwave rice
  • 2 tsp olive oil
  • ½ red onion
  • 1 clove garlic
  • 1 chorizo sausage
  • 1 400g can crushed tomatoes
  • 1 125g sweet corn kernels
  • 150g green beans
  • ¼ bunch coriander.
  • 1 tsp cumin
  • 1 tsp paprika
  • Pinch chilli powder (optional)

Instructions

  1. Thinly slice the onion and chop the beans and chorizo into 1 cm pieces.
  2. Heat the olive oil in a large frying pan over a medium to high heat. Transfer the onion, beans and chorizo to the frying pan, then mince the garlic directly into the pan. Cook for 5 minutes, stirring occasionally. Meanwhile cook the microwave rice, according to packet directions, and set aside.
  3. Add the cumin, paprika, chili powder, rice, crushed tomatoes and corn to the frying pan and stir until well combined. Cook for 5 minutes until all the ingredients have warmed through and the tomatoes have reduced. While the ingredients are cooking pick ¼ cup of coriander leaves. When the rice is ready, stir through half the coriander. Divide the rice between two plates and top with the remaining coriander.

Notes

No chorizo? Add some shredded BBQ chicken or ham instead.
