Remember my 15-minute chicken fried rice?
Quick, tasty, yum…super reliable.
I love that recipe. It never lets me down. But, some nights I feel like I something extra. A little zhoosh, to make the mid-week feel less like the mid-week.
And that’s where my special friend rice comes in. It’s all the same good stuff, with just a little more yum. I’m talking:
- Ham
- Baby prawns
- Eggs
- Corn
- Peas
- Carrot
- And all the deliciousness that comes from adding garlic, sesame oil and soy sauce to just about anything.
Now the next bit is optional, but highly recommended. And, if there is something more convincing than highly recommended, then that. Serve this recipe with a side of prawn crackers. It’s what puts the SUPER SPECIAL into my special fried rice. And no one. I repeat no one will refuse to eat a meal, that comes complete with a bribe…oops I mean a side of prawn crackers.
And thanks to the miracle that is steamed microwave rice, just because this rice is ‘special’, doesn’t mean it takes ages to cook. I’m talking, a total cook time of 15 minutes.

Oh and other vital, and equally important, stats for this recipe are: dairy free, gluten free option, and loads of veg so it’s good for you without tasting good for you. Oh, and there’s the optional prawn crackers. I just thought I’d mention that again. In case you had forgotten.

Special Fried Rice – 15 Minute Dinner Recipe

Quick. Easy. Delicious. That’s special fried rice.
Ingredients
- 1 250g packet steamed microwave rice
- 4 tsp sesame oil
- 2 eggs
- 100g ham
- 1 clove garlic
- 1 carrot
- ½ cup tinned corn
- ½ cup frozen peas
- 200g tinned baby prawns (shrimp)
- 2 tbs soy sauce or tamari, depending on your dietary requirements.
- 2 handfuls of prawn crackers
Instructions
- Cook the rice according to packet directions. Meanwhile, cut the carrot into small pieces and mince the garlic. Set aside.
- Heat a large frying pan over medium heat with 1 tsp of sesame oil. Whisk the eggs in a small bowl and then tip the eggs into the hot frying pan. When the eggs begin to set, use a spatula to break them up. Remove the egg from the frying pan into a small bowl.
- Add another teaspoon of sesame oil to the frying pan (there’s no need to wipe it out) then cook the carrot and garlic for 5 minutes or until the carrot is just soft.
- Next, add the rice, peas, corn, prawns and egg to the frying pan and stir until all the ingredients are combined and warmed through. Mix through the soy sauce/tamari and remaining sesame oil.
- Remove from heat, divide between 2 bowls and serve with a handful of prawn crackers.
Notes
- Cooking for a family? Just double the ingredients, except maybe the prawns. Unless you really like prawns. Then go for it.
- Speaking of prawns. If you don’t like them, throw in some supermarket roast chicken instead.
